Apple Almond Custard Cake

Cooking time: 1 hour


1 Tbs. butter
1 Tbs. + ¼ cup sugar
1 cup 2% milk
3 large eggs
¾ cup almond meal (flour)
¼ cup whole-wheat flour
½ tsp. almond extract
4 apples, cored, peeled, and thinly sliced
¼ cup sliced almonds

• Preheat the oven to 325°F.
• Generously butter a 9″ round baking dish with the butter and sprinkle with 1 Tbs. of sugar.
• In a large bowl, whisk the ¼ cup of sugar, milk, eggs, almond meal, whole-wheat flour, and extract into a smooth batter.
• Arrange the apples flat in the baking dish. Pour the batter over the apples. Sprinkle the almonds across the top.
• Bake until the center is firm and the almonds are starting to brown, 55-60 minutes.
• Serve warm.
